Buzzonaglia of Carloforte bluefin tuna – the lean cuts

Althunnus Tonnare Sulcitane offers the finest cuts of Carloforte bluefin tuna buzzonaglia, cuts selected for this line that come from wild tuna arriving in May, with sizes from a minimum of 100 kg to a maximum of 200 kg. The buzzonaglia consists of parts of the thread in contact with the central fishbone. With an intense flavor and dark color, its softness is much appreciated above all, and it is caught in the fixed trap of Cala Vinagra in Carloforte. For maturation and conservation, Althunnus uses oil from the San Giuliano company in Alghero. Product traced and certified by the appropriate BCD document.
