Sa Laurera Sardinian black chickpeas are grown in Marmilla, a splendid hilly region of Sardinia, in soils carefully selected for the cultivation of legumes, without fertilizers, herbicides and chemicals. Peculiar characteristics of black chickpeas are the rough surface, the medium-small size and the remarkable water absorption during soaking. Excellent for the preparation of meatballs and soups in combination with fish and seafood. The black Sa Laurera chickpeas are sown by hand in March and manually weed twice. Once they have reached maturity, in July, the plants are uprooted at dawn, dried in the sun and threshed. The harvested seeds are then subjected to screening and careful manual sorting.
