The Zichi flour of durum wheat (or Sardinian flower flour) Dorada was born in the Su Mori mill from the slow stone grinding and sifting of the selection of durum wheat grown in the Campidano. It is impalpable like flour, and has a rustic color, and has a generous content of proteins, fibers, vitamins and mineral salts as it is wholly ground. Naturally endowed with taste and aroma, it is the protagonist in the preparation of spianate, carasau, fresh pasta, focaccia, biscuits and enriches the dusting of other doughs. In many parts of Sardinia the fine flour is called "tzicchi" or "su scetti", and is the main ingredient of the bread of the festival (Zichi, Tikki, Tzicchi bread).
