Fiore sardo PDO Cheese

Fiore Sardo PDO by Azienda Agricola Marchi is a pecorino cheese with raw milk and raw dough. Its name seems to derive from the wooden molds (called “pischeddas”) once used in the processing, which had a carved flower on their bottom parts. The rind is thin, varying from gray to brown, according to the seasoning. The dough changes from white to straw yellow. It is hard, crumbly, dry and grainy, with minute crystals in the most seasoned forms. The smell is intense, and the flavor is decisive. Fiore Sardo DPO by Marchi is an excellent and unique table cheese.
