The hasadinas salias (salted formagelle) prepared by the La Spiga Dorata pasta factory are small and thin cakes of pasta and fresh cheese. This is how Grazia Deledda described them: "It was a small and thin cake of fresh pasta and cheeses, yellowed with saffron." The hasadinas are among the most loved products of the Sardinian gastronomic tradition. La Spiga Dorata still prepares them today with local ingredients and according to the traditional recipe, to give all the taste of the past. Sa hasadina is to be eaten steaming and racy as an appetizer or main course, or cut into quarters on an aperitif board.
