The monococcus wheat malloreddos by I grani di Atlantide® are prepared with wheat from an entirely Sardinian chain. The wheat, grown without the aid of chemical products in soils far from any source of pollution, is cleaned, undressed and stone ground with a very slow grinding (30 kg/h) which prevents the overheating of the flour. The monococcus (single-grain) wheat malloreddos thus obtained are then bronze-drawn and dried at low temperatures, maintaining a great amount of antioxidants, which give the pasta its brown color.
