The classic “pistoccu di Armungia” by Alex Pitzalis is a dry, long-lasting bread biscuit, which was born in ancient times from the need of the shepherds to have an edible and fragrant food even after several weeks of stay in the sheepfolds, far from home. Made with durum wheat semolina and mother yeast, Armungia’s classic pistoccu is a genuinely good Sardinian bread that, dry or moistened, can be used as a base to accompany cheese, sausages and cured meats.
