There is a clove of Tuvoi, a semi-matured raw milk organic pecorino. Then, a clove of Poiana, a fresh organic pecorino, excellent for roasting. Third comes a clove of Cirsium, an organic pecorino made with vegetable rennet from milk thistle. Finally, yet importantly, there is a jar of organic seasoned pecorino cream, with a strong flavor and a rich consistency. The processing of Formaggi Biologici Floris is manual, and it follows the ancient family recipes.
