The organic Cappelli durum wheat semolina from the Mulino Stone and stone ground wheat guarantees a healthy and balanced diet. The stone grinding, carried out slowly with 85 revolutions per minute, reduces the overheating of the millstones and consequently the wheat germ, the vital part of the grain, is kept intact, and with it the vitamins E and B, the mineral salts (phosphorus magnesium and potassium), fiber and antioxidants. The Cappelli BIO semolina is recommended for the preparation of all types of traditional bread, fresh and dry pasta, pizza and typical Sardinian desserts. It is also used to make "su filindeu," a rare and beloved traditional pasta.
