Selet Sas by Alessandra Accalai is a seed company that since the nineties has concentrated its production on the Cappelli wheat variety, following the organic farming regime. The diffusion and maintenance of pure Cappelli’s wheat takes place in close contact with farmers, raw material transformation operators, pasta makers, bakers, pizza makers and pastry chefs. For years, Selet has been enhancing its quality production by studying and sowing new ancient grains, thus stopping the genetic erosion that progressively limits cultural biodiversity.
