Pastore Transumante (Transhumant Shepherd) made by Su Grabiolu Farm is the best example of the most ancient Sardinian cheese. It is obtained by fresh and raw whole milk, which is coagulated with lamb's rennet. The shape of Pastore Transumante is also carefully treated with olive oil. The pasta has an appealing white, straw yellow or amber colour. The taste is as strong as the winters passed on the mountains, and becomes slightly sour and spicy in the most seasoned forms. Pastore Transumante pecorino is excellent when consumed young, and is perfect if grated.
