Su casu cun s'axridda cheese by Azienda Agricola Fossada means literally “cheese in clay”. It is made with raw sheep or goat's milk. It has a raw dough that is sometimes half-cooked, without adding ferments. During the long aging (even up to two years), this organic cheese is massaged with lentisk oil and then covered with a clay cap. With a smooth or slightly wrinkled gray-hazelnut rind, Su casu cun s'axridda has a semi-hard, crumbly, white or straw yellow dough. It has sour, astringent, slightly salty and spicy taste. S'Axridda has the P.A.T. (Traditional Agri-Food Product) appellation, and gained several important awards.
