Carloforte Tonnare produces entirely by hand the corsa’s red tuna tarantello by fishing this fish among tuna’s steady flocks of Carloforte, Portoscuso and Porto Paglia. The tuna tarantello, a very nutritious and tasty food, is one of the flagships of Sardinian food and culinary traditions, and brings with it both taste and the saline and marine memories of Mediterranean Sea. After fishing, the tuna is entrusted to the care of time, placed in a pool of extra virgin olive oil and high quality salt.
