The monococcus wheat Carasau bread by I grani di Atlantide® is a bread made with wheat from a 100% Sardinian chain. The wheat, grown without the aid of chemical products in soils far from any sort of pollution, is cleaned, undressed and stone ground with a very slow grinding (30 kg/h), preventing the overheating of the flour. This monococcus (single-grain) carasau bread is made with semi-whole wheat flour and dry yeast, which makes it more digestible, and is baked in an artisan oven. It is thicker than average, very crunchy and its flavor tastes of another era.
