The Sardinian malloreddus by Pastaficio Tanda & Spada are a hard wheat semolina made pasta, drawn in bronze and dried at low temperatures. Malloreddus are the protagonists of Sardinian table, both in everyday life and during important occasions. They had been prepared since ancient times, heirs of the millennial diet of farmers in the Mediterranean area, which was based on the use of wheat. Spread throughout the island, the famous "Sardinian gnocchettis" are called in different way: in southern Sardinia they’re "is malloreddos", in Sassari’s province are "ciciones", in Logudoro they’re named "macarones caidos", and in Nuorese they’re the "cravaos".
