Azienda Agricola Fossada Escaplano

Azienda Agricola Fossada by Rino and Francesco Farci is an organic farm born in Escalaplano, Province of Southern Sardinia. There, since 1800 Rino's great-grandfather had been raising sheep and goats for the processing of "Axridda" cheese, the "cheese in clay". S'Axridda is a cheese made with raw milk and raw dough treated with clay and lentisk oil. It is a unique product, which has almost disappeared in Sardinia. The family-run Azienda Agricola Fossada has handed down the ancient production of "cheese in clay" from generation to generation. It does so by transforming the milk of Sardinian sheep who graze wild herbs among the fragrant lentisk, myrtle, thyme, rosemary, helichrysum bushes.
