Carloforte Tonnare company produces entirely by hand the corsa’s red tuna ventresca. The fish is caught during the so-called "corsa" season among the steady flocks of tuna in Carloforte, Portoscuso and Porto Paglia. The ventresca, which is the most valuable part of red tuna, or rather the fatty area of the abdominal cavity, is carefully preserved in a metallic box containing extra virgin olive oil and quality salt, which preserve preciously its unique Mediterranean flavor.
