The natural pickled olives produced by Frantoio Oleario Foddi come from a slow water and salt fermentation of the "nera di Gonnos" cultivars, the original olives from the Sardinian village of Gonnosfanadiga, which lies next to Monte Linas. The olives rest together in 200 liter drumsticks until their full maturation and fermentation takes place, after about nine months. At the end of this fruitful pregnancy of taste, Foddi's pickled olives become appetizers with a genuine Sardinian flavor, and are then ready to be enjoyed.
