ZIU ELIGIU PECORINO CHEESE - WHOLE FORM

"Ziu Eligiu" by Caseificio Murtas is a semi-cooked dough pecorino cheese, made with carefully selected milk of sheep raised in the natural pastures of Gerrei. It is cylindrical, slightly convex, with a brown crust that tends to harden as the ripening progresses. The product inside has very small holes and is white or slightly yellow-coloured. This cheese is soft on the palate, easily soluble, sapid with a pleasant balance of sweet and savoury taste. The spicy emerges, without ever prevailing, only after six months of ageing.
